Some of these techniques were introduced long ago in the context of the so-called ``many-body'' problem and applied to non-relativistic systems such as the electron gas, liquid helium, nuclear matter, etc. More recently, these methods have been extended to systems of relativistic particles interacting with gauge fields, for which new and interesting technical and conceptual issues appear, leading to new developments. The methods presented in these lectures have a broad range of physical applications. We shall discuss two specific applications: one related to hot and dense matter with temperatures in the tera Kelvin range, the other related to Bose-Einstein condensation in ultra-cold gases with temperatures in the nano Kelvin range. As we shall see, in these two systems, long wavelength collective phenomena lead to similar features, in spite of the huge difference in orders of magnitude of the respective energy scales. The first four lectures will be devoted to a general introduction to field theory at finite temperature, with emphasis on the physics of the quark-gluon plasma produced in ultra-relativistic heavy ion collisions [arXiv:hep-ph/0107131, hep-ph/0303185, hep-ph/0101103]. The last two lectures will be devoted to Bose-Einstein condensation, and will focus more specifically on the effect of weak interactions on the transition temperature of the dilute Bose gas. These states of matter are described by Quantum Chromodynamics, which predicts in particular that matter becomes "simple" at high density and/or temperature: because of asymptotic freedom, one expects matter to be then a weakly interacting gas of quarks and gluons, the so-called quark-gluon plasma. The experiments performed at RHIC over the last few years have forced us to revisit this notion. The temperature and density reached in these experiments are presumably not high enough to produce the ideal quark-gluon plasma. Instead, the data provide evidence that the quark-gluon plasma created at RHIC is strongly interacting, and it has been argued that it behaves as a "perfect liquid".
